Macaroni Cheese
Ingredients
- 8oz Macaroni,
- 1 1/2 pt Chicken Stock
- 8oz Mature Cheddar
- 8oz Unsmoked Lardons
- 2 Egg Yokes
- 4 tbsp Tomato Sauce
- Seasoning.
Method
Boil the chicken stock and season to taste. Add the macaroni and cook it until it is al dente. Once cooked, drain the macaraoni, reserving the stock for later.
Mix the macaroni with 3/4 of the cheese, all the lardons and the tomato ketchup. Loosen with some of the reserved stock and check the seasoning. Whisk the two egg yokes and add to the macaroni mixutre.
Transfer to an (oven ready) serving dish, scatter the remaining cheese on top and grill for 5 minutes until brown and bubbling. Serve immediately with black pepper.
For a vegetarian option
Replace the chicken stock with vegetable stock and (if not french) remove the lardons.
