Papas Arrugadas with Mojo

Ingredients

2lb New potatoes
lot of Salt.

For the ‘Mojo Picón’
1lb Ripe Tomatoes
3 Cloves of Garlic
Hot or Sweet Red Pimenton (to taste)
1 tbsp Olive Oil
1 tbsp White Wine Vinegar
Pinch of Cumin
Salt and a liberal dose of pepper

Method

Clean the potatoes and put them into a casserole dish with the salt and cover with water. The potatoes should float – if they don’t then add more salt!

Cook.

When cooked, drain most of the water from the pot and cover the potatoes with a layer of salt. Turn down the heat and gently shake the pot so that salt crystallizes on the potatoes. Finally, turn off the heat and cover the pot with a tea-towel for 5 minutes (so that the potatoes turn ‘wrinkly’).

For the ‘Mojo Picón’
Put all the ingredients into an electric wizzer, add salt and pepper, and wizz.

To Serve

if cool, warm the potatoes and serve with cooled Mojo.
