Garlic Sauce

Ingredients

2 Large Garlic Bulbs
15g Butter
150ml White Wine
1tsp White WIne Vinegar
1tsp Caster Sugar
100ml Double Cream
Salt and (white) pepper to taste

Method

1. Bake the garlic bulbs on a baking tray for about 30-40 minutes in a medium (180C) oven. You’ll know they’re ready when there is a golden ooze starting to come out of the bulb.

2. Peal the garlic bulbs and scoop out the garlic into a small saucepan. Mash the garlic with a fork and heat with the butter until the butter has melted.

3. Add the white wine, vinegar and sugar and reduce by two thirds. Add the cream and heat through, taking care not to boil it!. Blend with a blender and season to taste.

Serve with Lamb!
