Orecchiette San Marzano

Here’s my candidate for the quickest and easiest pasta of all time, orecchiette con pomodoro or Orecchiette Pasta with Pomodoro Tomatoes. OMG.

Ingredients

  • 100g dried Orechiette pasta
  • 1 or 2 fresh & ripe San Marzano Tomatoes
  • 1 clove Garlic
  • 1/2 tsp Black Garlic Sugar
  • 1tsp balsamic Vinegar / Glaze
  • liberal pinch Dried Oregano
  • small pinch of mild chilli flakes
  • Olive Oil

Method

  1. Put the Orechiette pasta on to boil for 10 minutes (or as long as the packet directs)
  2. Chop the tomatoes into large chunks and the Garlic (finely chopped), and and fry in a liberal splash of Olive Oil. Add the oregano and chilli flakes and cook over a medium high heat with a thigh lid
  3. When the pasta is cooked, drain the water and add the pasta to the sauce.
  4. Serve immediately with parmesan, or if you are looking for something less healthy, Burrata!
