Garlic White Bean Dip

Ingredients

  • 2 or 3 heads of Garlic
  • Olive Oil to cover
  • 1 Can Canellii Beans (Cooked)
  • 1/2 cup parsley leaves

Method

  1. Put the pealed head(s) of garlic in pan, and cover with olive oi. Slowly cook or confit the garlic over a low-medium heat, until browned.
  2. Let the Garlic cool for a couple of minutes, and the add a sprig or two of thyme and Rosemary. Set aside until room temp.
  3. When cooled, add to food processor with the herbs (remove stalks!) and blitz to smooth paste.
  4. Add the can of Cannelli beans, with liquid to the blender; add the half a cup of parsley leaves, and then salt to taste. Blitz again.
  5. When textured / smooth (to taste), add a couple of splashes of roast garlic oil, from earlier; mix and serve.
  6. Serve with a couple of lemon wedges and a drizzle of Garlic Oil for presentation. Goes great with Breads and Crudities.
