Mediterranean Olive Oil Dip
Ingredients
¾ cup olive oil
2 tbsp balsamic vinegar
½ cup Parmesan cheese, freshly grated
1 tbsp rosemary, finely chopped
1 tbsp Kalamata olives, finely chopped
2 tbsp sundried tomatoes, minced
3 garlic cloves, crushed
1 tbsp fresh thyme leaves
2 tsp chili flakes
Zest of 1 lemon
1 tsp sumac
1 tsp flaky sea salt (or to taste)
Instructions
Add olive oil, vinegar, Parmesan, sundried tomatoes, olives, rosemary, thyme, garlic, chili flakes, sumac, lemon zest, and salt to a small bowl or shallow dish.
Stir everything together until well mixed.
Taste and adjust the salt if needed.
Serve straight from the bowl or transfer to a dish for presentation.
Enjoy with fresh, crusty bread.
