Beetroot and Burrata Stack
Ingredients
3 golden beets, roasted & sliced into rounds
2 red beets, roasted & sliced into rounds
1 fresh burrata cheese ball, thick sliced
Handful of pistachios, toasted & chopped
Zest of 1 orange
1 tbsp extra virgin olive oil
1 tbsp honey
½ tsp flaky sea salt
½ tsp black pepper
Fresh thyme for garnish
Instructions
Roast & Slice the Beets: Wrap beets in foil and roast at 400°F (200°C) for 45–50 minutes until tender. Let cool, peel, and slice into ½-inch thick rounds.
Assemble the Stacks: Start with a golden beet slice as the base. Add a slice of burrata, then a red beet slice. Repeat layers until stacked tall, finishing with burrata on top.
Garnish & Drizzle: Sprinkle toasted pistachios over the top. Drizzle with olive oil and honey for extra richness. Finish with orange zest, flaky sea salt, and black pepper.
Serve & Enjoy: Garnish with fresh thyme and serve immediately!
