Ingredients
- 1lb small King Edward potatoes
- Large knob butter
- 1 finely chopped clove garlic
- 1tsp dried herbs, e.g parsley, thyme or rosemary
Method
- While the potatoes are boiling, put the butter, finely chopped garlic and herbs in a small bowl and melt. Leave to hydrate the dried herbs.
- When par boiled, Remove the potatoes from the water and lightly crush on a baking sheet.
- Spoon the melted butter mixture on each potato, seasioning as necessary.
- Bake in the oven for 15-20 min, until golden / lightly crispy.
