Crushed Garlic & Herb Potatoes

Ingredients

  • 1lb small King Edward potatoes
  • Large knob butter
  • 1 finely chopped clove garlic
  • 1tsp dried herbs, e.g parsley, thyme or rosemary

Method

  • While the potatoes are boiling, put the butter, finely chopped garlic and herbs in a small bowl and melt. Leave to hydrate the dried herbs.
  • When par boiled, Remove the potatoes from the water and lightly crush on a baking sheet.
  • Spoon the melted butter mixture on each potato, seasioning as necessary.
  • Bake in the oven for 15-20 min, until golden / lightly crispy.
