Mediterranean Chickpea Salad

Ingredients

  • Cheese: 150g Feta.  Sheep or Goat’s cheese could easily be substituted here.
  • Medjool dates: 4, stone removed & chopped; 1tbsp honey if preferred.
  • Cucumber:  1/2 large cucumber, skin and pips removed.
  • Cherry tomatoes:  500g, ideally multicoloured.
  • Mini Peppers: 150g, Roasted and skinned.  Use ready made, if preferred.
  • Chopped fresh herbs: Sprig or two of mint, parsley and/or basil.
  • Chickpeas: 300g… Roasted or not! If not, pine nuts or almonds can add texture.

Dressing

  • Add salt, honey (if using), dried herbs (if fresh are ‘out of season’), add lemon (if using).
  • Fennel seeds are good to add, as can be Cumin.
  • All to taste!
