Rich Beef Stew

Ingredients

  • 2lb stewing steak seasoned with salt, pepper, mustard powder and cayenne pepper
  • 2oz butter
  • 100g unsmoked streaky bacon or lardons
  • 4 roughly chopped onions, 1pt (minus a slurp or two) cider
  • 100g chopped celery
  • 4 salted anchovy fillets
  • 3oz pickled walnuts, sprig of thyme
  • 1pt beef stock

Method

Cut the meat into 1″ pieces and coat with the seasoned flour.   Heat the butter in a saute pan and brown the meat.

Chop the bacon (or use the lardons) and cook it with the onions in the saute pan until the onions are soft and add in the browned meat.   Add all the other ingredients, cover and cook for approx 2 hours, stirring and checking levels occasionally.    To finish, add a small knob of butter and stir in.   Leave to rest for at lesat 5 minutes before serving.
