Courgette Fritter

Coarsely grate 1lb of courgettes and sprinkling liberally with salt; leave in a colander for half an hour while the salt draws out the moisture.

Squeeze the courgettes and cook in olive oil with some chopped onion and garlic for about 10 minutes, until golden.

Mix with 4 beaten eggs, 8 tbsp plain flour, 1/2 lb crumbled feta and some chopped dill.

Fry heaped tablespoons of the mixture in olive oil to make little golden fritters.
