Piedmontese Peppers
Ingredients
4 Garlic Cloves, peeled and finely sliced
4 Red Peppers, halved and deseeded
4 Ripe plum tomatoes, peeled and halved
Sea Salt
Olive Oil
8 Anchovy Fillets
Method
Preheat the oven to 150C. Divide the sliced garlic between the peppers and place half a tomato in each. Season with salt and drizzle with olive oil. Place in the oven and cook for approximately one hour.
When ready, the peppers will look slightly deflated and blistered. Remove from the oven and leave too cool. Split the anchovies in two lengthways and place two halves on each pepper.
Serve with some rocket and good buffalo mozzarella.
